Healthy shrimp stir fry
This has been my go to meal prep for work! So easy and delicious 😊
Ingredients:
- 1 bag of large shrimp (I got mine frozen)
- 1 bag of frozen stir fry vegetables(I used trader joes)
- Coconut amino
- 1 medium size zucchini (or already spiralized)
- Red pepper flakes
- Avocado oil OR olive oil
- Trader Joe’s chili lime seasoning
- Preheat oven to 400F and line a pan with a baking sheet
- Sprinkle seasoning over thawed shrimp
- Bake for 15mins at 400F
- Assuming you thawed the frozen stir fry vegetables, add to a skillet over medium heat with avocado oil. Add 2 tbsp of amino acids. Cook for about 8 mins
- While shrimp and veggies cook, spiralize your zucchini
- Add zucchini to skillet after 8 mins and cook for another 2 mins
- Serve with red flakes and more coconut aminos if you want!
